Apple Pie Granola

Oh my goodness this is sooo yummy!

I have been making this almost every week for a few months now.  The original recipe I got off of Pinterest from For the love of cooking and have since tweaked it a bit for my tastes. I like making things myself with my ingredients I can pronounce. The store bought stuff has loads of chemicals (natural & artificial flavors) stuff that God never meant to go into the human body.  Lot of excess sugars & salts neither which are good for you in the quantities they are pushing.  This is a great smack to put on yogurt, top an apple or berry crisp with or just eat with milk for a meal.  I haven't put calories, or servings on any of my recipes because honestly what is up with that anyway?  A serving size can mean so many different thing because there are so many variables. take a serving of soup.  A 1 cup (8oz) "serving" of chicken & broccoli soup is a good amount if you are having it with a small sandwich or a piece of homemade sourdough bread or adding a side salad with it but that same "serving of 8 oz is not enough if you don't have anything with it & are eating that Soley.  So that is not a serving. Plus, tiny people eat less than big people, so their servings are different. So, I don't add any of that nonsense. But I will say roughly how much it make & let you to it.

APPLE PIE GRANOLA

INGREDIENTS

5 Cups old-Fashioned rolled oats

1 1/2 Cups dried apple chunked or sliced

1 Cup Chopped Walnuts or Pecans

1 Tbsp Cinnamon

1/2 tsp fresh grated nutmeg

1/2tsp salt

2/3 Cup melted Coconut oil

1/2 Cup Real Maple Syrup

4 Tbsp Brown Sugar

2 tsp vanilla

INSTRUCTIONS

Preheat your oven to 300 degrees & line a baking large baking sheet or 2 regular sized baking sheets with parchment paper.

Mix the oats, nuts, cinnamon, nutmeg & salt in a large bowl. Set aside.  In a small pan heat the coconut oil, maple syrup & brown sugar till warmed & brown sugar & coconut oil are melted.  Take off the heat & add the vanilla to the oil mixture. Pour over the oats and stir to coat evenly. pour out onto the prepared pans & spread evenly, using a rubber spatula pat the mixture flat.  bake for 35- 38 minutes, Stirring halfway through baking time.

Remove from the oven and cool completely in the pans. Once cooled break into crumbles.

Store at room temperature in an airtight container. I have found it will stay fresh in the airtight container for almost a month. Usually, mine doesn't last more than 2 weeks max cus I ate it all but I set some aside just to see & it was still good after a month. If you have one of those cool vacuum jar thingies all the better. It will last even longer. I love mine use it for a lot of things.

This recipe makes roughly 9- 10 Cups of granola

Enjoy my lovies
